Pumpkin Spice Smoothie: Toddler Edition!

Who’s excited for pumpkin spice everything this fall? I know I am!

I get so excited every year during this time to have pumpkin everything. I’m definitely that customer ordering a pumpkin cream cheese muffin, pumpkin loaf and a pumpkin spice latte! The more pumpkin, the better…Okay, maybe that’s a little much, but the point is who doesn’t love pumpkin. The only debate I have is when it comes to the pie - I’ll take sweet potato pie any day over pumpkin pie.

Pumpkin has so much fiber and protein! It’s rich in antioxidants and high in Vitamin A which makes me so excited to share this recipe with you because this is a healthy power smoothie for both you and your little one. Plus, it makes for a great activity and your toddler is going to love helping you. My son was so excited about this, he ran through the house with all the mini pumpkins. It was the cutest thing!

Pumpkin Spice Smoothie!

Here’s What You’ll Need:

  • 1/2 cup of pumpkin puree (make your own or use can)

  • 1/2 banana

  • 1/3 cup of greek yogurt (I used vanilla greek yogurt)

  • 1/4 cup of whole milk (almond milk, oat milk or soy milk can also be used)

  • 2 tsp of honey

  • 1/2 tsp pumpkin spice

  • 3-4 ice cubes

Instructions (including making your own pumpkin puree):

  1. Preheat the oven to 400 degrees F.

  2. Lightly coat a baking pan with oil (I used vegetable oil).

  3. Cut pumpkin in half and remove the seeds.
    Note: You can save the seeds to make some delicious roasted pumpkin seeds!

  4. Roast your pumpkin(s) for 45 - 60 minutes. (you will know when your pumpkin is ready when it is nice and soft!)

  5. Take the pumpkin out of the oven and let cool for 10 minutes.

  6. Scoop your pumpkin and puree in a blender.

  7. Add banana, yogurt, milk,  honey, pumpkin spice & ice cubes. Blend until smooth or desired consistency.

  8. Serve and enjoy!

Notes:

  • Instead of using ice cubes, you can use a frozen banana. Both ways are delicious!

  • If consistency is too thick, add more milk.

  • Store the remainder in the fridge for later or the next day.


Make Pumpkin Ice Cream Pops!

  • After you make your smoothie from the recipe I’ve provided, separate your mix out into a popsicle maker and freeze! I did this a few days later and it was a huge success to help those aching little gums.
