Simple Blueberry Banana Muffins

Over the holidays, I wanted to make something different besides the usual baby oats with banana. I could tell my little one was getting tired of having oats every morning so I tried these out. These simple blueberry muffins are so easy to make and best of all your little one will love them! The funny thing is, when I made these muffins over the holidays, everyone in the house was eating them. Best of all, there is no added sugar and the banana is used as your sweetener.

What You’ll Need:

Makes roughly 12 muffins

  • 2 eggs

  • 1 banana

  • 1 cup of baby oats

  • Blueberries (the amount you use is entirely up to you)

  • 1.5 tsp of baking powder

Note: Now that my baby boy is a toddler I use regular rolled oats.

Instructions:

  1. Preheat the oven to 350 degrees F.

  2. Lightly coat your muffin pan with a nonstick spray.

  3. In a large bowl, mash the banana with a fork.

  4. Mix in your eggs, baby oats or oats of choice and baking powder.

  5. Pour mix into a muffin pan. (For easier clean up, use muffin/cupcake liners)

  6. Top off your mix with a few blueberries in each muffin.

  7. Bake for 28-30 minutes or until edges are golden.

  8. Let pan cool for 10 minutes.

  9. Serve and enjoy!

Storage Tips:

You can store your muffins in the fridge for up to 5 days and serve chilled or warmed lightly. Muffins can be stored in the freezer in a zip lock bag making sure to remove as much air as possible for up to 2-3 months.
